Makes: 6 fritters.
Govindbhog Rice –40 gms (boiled)
Tomato-100 gms (finely chopped)
Fresh Basil- 20 gms (finely chopped)
Onion-25 gms (finely chopped)
Garlic- 1 clove (minced)
Cheddar Cheese- 12.50 gms (grated)
Mozarella Cheese- 20 gms (grated)
Salt and Pepper to taste
Butter- ½ tbsp
Bread Crumbs- 12.50 gms
Vegetable Oil for frying
Heat butter in a pan and sauté the onions and garlic. When the onion is soft and translucent, add the chopped tomatoes. Sauté the tomatoes till they are soft. Add the chopped basil to this mixture and cook for 1 minute till the basil releases its aroma.
Turn of the flame and add the grated cheese to this mixture. Add salt and pepper to taste.
Once the mixture cools down, divide it into 6 equal portions and shape them into fritter balls.
Coat the ball with bread crumbs and fry till they are golden brown.
