Are you a foodie? If so then we are sure a mouthwatering snack is as important to you as a tempting main course item. And the ironical part is this; we often get lost to find a quick and easy recipe for a delicious food. To solve this problem here I am suggesting 3 most quick and easy to cook recipe. These are so quick that you can serve them within a zap of 10 minutes.

Besan ke Paranthe

Ingredients

250 gms besan, 2 Tbsp. flour, 1 onion, 2-3 green chili, Chopped ginger, 1 Tbsp. turmeric powder, 1 tsp. jeera, 1 Tbsp. dhania, 1 Tbsp. oil, Coriander, Salt

Method

Make dough with besan, flour, onion, green chilies, chopped ginger, turmeric powder, coriander, jeera, coarsely ground coriander seeds and oil by nicely kneading them together. Then roll it out in round paranthas and fry with ghee.

Glass Noodle Salad

Ingredients

2/3 cup thai glass noodle, 1/4 cup broccoli, 1/4 cup carrot, 1/4 cup tomato, 1/4 cup baby corn, 1/8 cup onion, 1/4 cup celery leaves and stems, 1 tsp chilies, chopped, Black fungus (optional), Vegetable seasoning sauce to taste, 1 tsp sugar, 1 tbsp lemon juice, Lettuce, 1 tsp sriracha sauce (optional)

Method

  1. Soak the vermicelli in hot water till it’s transparent and then strain it.
  2. Cut onions, tomatoes, celery and chilies. Slice broccoli into florets, baby corn length wise and julienne the carrots. Sauté the broccoli and baby corn in hot boiling water, one by one and then dip them into ice cold water.
  3. Mix together all the ingredients and add seasoning to taste.
  4. Serve on loads of lettuce and garnish with mint leaves.

Sheer Korma

Ingredients

2.5 cups full fat milk, 1/4 cup fine vermicilli, 1/4 cup sugar, 1 Tbsp butter, 1 Tbsp rose water, A small pinch cardamom powder, Nuts & Dry Fruits: 2 Tbsp dates – finely chopped, 2 Tbsp raisins, 1/3 cup cashews, almonds, pistachios, charoli nuts – chopped finely

Method

Boil milk in a pot until it contracts to half in volume.

In the meantime chop the dry fruits and nuts.

Soak dates in warm milk and keep it aside.

Heat butter in a pan and fry the nuts and raisins till slightly browned and is crispy. Keep aside.

In the same pan put vermicelli and cook till golden brown.

Then add half of milk and let the vermicelli get cooked.

Once the vermicelli is soft add sugar, cardamom powder, give a quick stir.

Add residual milk and let it boil in low flame.

Once it is thick put the roasted nuts, dates, rose water in it, give a stir and cook for 2mins then switch off.
